For this Druif, we macerated a variety of muscat grapes from Domaine Christian Binner in Ammerschwihr, Alsace, France. The grapes were picked on the beautiful terroir below the Kaefferkopf Grand Cru and consist of 80% Muscat d’Alsace Blanc (or Muscat à Petits Grains), 15% Muscat Ottonel and 5% Muscat d’Alsace Rose. These fine grapes macerated for almost three months on an ex red wine oak barrel. We used one- and two-year lambic, originating from three different barrels and nine different brews. All of the cereals were sourced in Pajottenland. The final fruit proportion is 356 grams of grapes per litre of finished Druif. 100% 3 Fonteinen.
3 Fonteinen Druif is maceration of grape (must) on / the co-fermentation of grape juice or wine with traditional lambic.
No addition of juices, syrups or artificial sweeteners. Unfiltered. Unpasteurised.
